Making - Garlic & Herb Sausages Mix 225g
This mixture of herbs and spices is the complete mix requiring no added salt of herbs to make a great 1.5Kg batch of delicious Garlic & Herb Sausages. All you need to do is add water and pork and hey presto! You’ll have the most delicious sausages ready to go on the BBQ.
Just add good quality pork meat with a lean/fat ratio of 70/30. You can ask your local butcher to provide pork trim in this ratio for you or alternatively, if you are using a whole shoulder of pork you should be about there with the ratio’s if you use the whole shoulder.
To make a 1.5Kg batch of Garlic & Herb Sausages just follow the recipe below
1020g Pork trim 70/30
225g Garlic & herb sausage seasoning (1 packet)
255ml Chilled water
2.5m 32-34mm natural hog casings
Mince the pork through a 5mm plate. Add the garlic & herb seasoning and blend together. Add the water and mix well until you have a smooth even mixture. Re-mince the mixture through a 5mm plate and stuff into the hog casings.
You can also use this mix to make pork burgers if you prefer, simply omit the stuffing and form into burgers patties of your chosen size. A 1.5Kg batch should make 6 x 8oz patties with a bit left over.
You can also use other meats like beef, lamb or chicken if you prefer
Cooking Instructions: BBQ, grill or pan-fry. Cook for 10-15 mins or until cooked through, turn occasionally to ensure the sausages are evenly cooked.
