A morning making jam chutney & preserves

Spend a morning learning the techniques behind the traditional methods of food preserving from award winning jam maker, Hazel Roberts. Suitable for the absolute beginner or those who would like to refine their technique or attempt new recipes, this course covers jam and jelly making, chutney making and other preserving techniques. By the end of the session you will have a selection of preserves to take home that you will have had a hand in making and you will feel enabled to continue making preserves at home.

This course will cover the following:

  • Jam making – as a group you will make a batch of jam and will learn about the essentials of the technique from fruit and sugar selection to successfully reaching the setting point and sterile conditions.
  • Jelly making – as a group you will make a batch of fruit jelly and will learn where this technique differs from jam making and when it is appropriate to use it.
  • Chutney making – as a group you will make one or two batches of chutney and will learn about the preparation of the vegetables and the selection of sugars and spices, as well as correct storage.
  • Time allowing, and depending on the season, other preserving techniques such as flavoured mustards, pickling, sauce making, cordial making and mincemeat may be possible but the theory will be covered.
